This spring, Commodore Perry Estate welcomes Chef Mark Lundgaard of Copenhagen’s celebrated Kong Hans Kælder for a limited culinary residency at Lutie’s. As head chef, Lundgaard led Kong Hans Kælder to its first-ever two Michelin stars in 2021 – an achievement rooted in classical technique and a distinctly modern point of view. During his visit, Chef Lundgaard will bring a refined Nordic sensibility to Austin through an intimate, two-night tasting experience. The menu reflects Kong Hans Kælder’s signature style: classical French foundations layered with modern Scandinavian influence, thoughtful restraint and an emphasis on pristine ingredients and precise execution.
