Raised in Oaxaca and celebrated for his dedication to authenticity and ingredient-driven cooking, Chef Kaelin’s menu celebrates the meeting of Mexico’s diverse regions through a gastronomic fusion of moles, tlayudas, mezcal, seafood from the Pacific and the Sea of Cortez, fresh regional vegetables, and contemporary techniques—each course designed to highlight the depth of tradition and the abundance of Baja’s land and sea.

About Chef Kaelin Ulrich
Chef Kaelin Ulrich was born in Oaxaca and grew up immersed in his mother Susana’s cooking school, where he developed a deep appreciation for Mexican culinary traditions and farm-to-table sourcing. He refined his craft in kitchens across Texas, Moscow, Nashville and New York before being tapped by Thomas Keller to lead the kitchen at La Calenda in Yountville, bringing authentic Oaxacan technique to California’s wine country. With a tattoo of an octopus on his forearm as a nod to his adaptive culinary journey, he continues to champion regional Mexican cuisine.
