Led by chef Hugo Guajardo, this special evening brings together open-fire cooking, regional ingredients and the distinctive flavors of the Yucatán Peninsula in an expressive celebration of Mexican terroir.
Baldío x Etéreo: A Thanksgiving Celebration

November 26–27, 2026
- This Thanksgiving, Etéreo welcomes Baldío—Mexico’s first zero-waste restaurant and the only restaurant in Mexico City awarded a MICHELIN Green Star. Through seasonal ingredients and responsible sourcing, Baldío reimagines Thanksgiving as a distinctly Mexican celebration of conscious abundance.

Etéreo is set along 300 meters of palm-lined coastline, where white sand and calm Caribbean waters meet a protected mangrove forest. Days unfold between the resort’s cascading pools and the sea, with paddleboards, kayaks and snorkeling equipment inviting effortless exploration. Beachside service, shaded loungers and private fire pits create an unhurried setting from morning through sunset.

Comal Cooking Class
- Discover the foundations of Mexican cooking through the flavors and traditions of the comal. Guided by Etéreo’s culinary team, guests will work with essential ingredients and time-honored techniques while preparing dishes inspired by the region.

Sunrise Snorkel
